Well. Weeks 2 and 3 did not go well. This won’t be much of an update…
Week 2: I missed getting some groceries, so following the meal plan I had written was not happening. I did stick closely-ish to the keto diet, just not organized.
Week 3: not good. Didn’t write a plan, did not stick to keto.
Which leads to…Week 4 being Week 1 Take 2.
One good thing, though, from week 2: Sausage & Cheese Balls
Sausage & Cheese Balls
Ingredients:
- 1# ground sausage (I had a “Special Blend” from a local butcher, heavy on black pepper and herbs)
- 8oz cream cheese
- 1/2c shredded cheddar cheese…approximately. I didn’t fully measure
Method:
- Preheat oven to 425 degrees F
- Mix the ingredients together
- Roll the sausage/cheese mix into balls. Mine were about 1.5″ diameter
- Bake on parchment paper for 30min or until the internal temperature is 170 degrees F
